Hi Michelle, I finally made the red beans and rice and it was delicious! Just the right amount of seasoning and spice. I made it with the buttered rice and some warm, crusty french bread on the coldest of days and it was perfect. I soaked the beans for 48 hours, which was something I had never tried before (soaking beans) and I was grateful for the tip because they were just the right texture after cooking. Next time, I won’t wait so long to make this. Thank you for sharing!
